Vegan Coconut Oil Chocolate Chip Cookies

Ingredients:

  • 2/3 cup melted coconut oil (unrefined for coconut flavor)
  • 3/4 cup brown sugar
  • 1/4 cup soy milk (or other non-dairy milk)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup vegan chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together melted coconut oil and brown sugar until smooth.
  3. Add soy milk and vanilla extract, whisk until combined.
  4. In another bowl, mix flour, cornstarch, baking soda, and salt.
  5. Gradually add dry ingredients to wet, stirring until just combined.
  6. Fold in chocolate chips.
  7. Scoop dough onto baking sheets and bake for 9-11 minutes. Cookies will be soft when taken out but firm up on cooling.

These cookies have a subtle coconut aroma from the coconut oil, adding a tropical twist to a classic treat.
