Low-Carb Vegan Paleo Nanaimo Bars (No-Bake)

Ingredients:

  • 1 cup macadamia nuts or cashews, soaked overnight or in hot water for 30 min
  • ¼ cup softened coconut oil
  • ½ cup unsweetened applesauce
  • 2 tbsp coconut flour
  • 2 tbsp maple syrup (omit or reduce for keto)
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup vegan dark chocolate chips (optional)

Instructions:

  1. Blend soaked nuts in a food processor until crumbly.
  2. Add coconut oil, applesauce, coconut flour, maple syrup, vanilla, and salt; blend until smooth and thick.
  3. Press mixture firmly into a lined square pan to form the base layer.
  4. Melt chocolate chips with a little coconut oil and spread over the base layer (optional).
  5. Refrigerate for at least 2 hours until set.
  6. Cut into bars and serve chilled.

These bars are nutrient-dense, rich in healthy fats from coconut oil and nuts, and fit perfectly into paleo, keto, and vegan diets.
