
Ingredients:
- 1 cup macadamia nuts or cashews, soaked overnight or in hot water for 30 min
- ¼ cup softened coconut oil
- ½ cup unsweetened applesauce
- 2 tbsp coconut flour
- 2 tbsp maple syrup (omit or reduce for keto)
- 1 tsp vanilla extract
- Pinch of salt
- ½ cup vegan dark chocolate chips (optional)
Instructions:
- Blend soaked nuts in a food processor until crumbly.
- Add coconut oil, applesauce, coconut flour, maple syrup, vanilla, and salt; blend until smooth and thick.
- Press mixture firmly into a lined square pan to form the base layer.
- Melt chocolate chips with a little coconut oil and spread over the base layer (optional).
- Refrigerate for at least 2 hours until set.
- Cut into bars and serve chilled.
