
Ingredients:
- 2/3 cup melted coconut oil (unrefined for coconut flavor)
- 3/4 cup brown sugar
- 1/4 cup soy milk (or other non-dairy milk)
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup vegan chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together melted coconut oil and brown sugar until smooth.
- Add soy milk and vanilla extract, whisk until combined.
- In another bowl, mix flour, cornstarch, baking soda, and salt.
- Gradually add dry ingredients to wet, stirring until just combined.
- Fold in chocolate chips.
- Scoop dough onto baking sheets and bake for 9-11 minutes. Cookies will be soft when taken out but firm up on cooling.
These cookies have a subtle coconut aroma from the coconut oil, adding a tropical twist to a classic treat.
